We currently have an HPE StoreOnce backup target and offload to Wasabi. The StoreOnce is getting pretty old and looking to replace it but wondering if I should do a dedup appliance again or just move to a lot of storage and use Veeam dedup/compression? I'm guessing pricing won't be a lot different since these appliances are expensive and I could get much better performance with traditional storage.
If I did do traditional storage what is the best way to size that?

clear answer: plain storage. Cheaper and faster. Server with internal disks is recommended. Your preferred server vendor should be able to offer proper configurations. As you mentioned HPE, that would be Apollo server (or the DL345 for smaller scale)
I like to refer to about REFS / XFS space savings (except you do active full)
