If so, XFS (faster?) or ZFS (compression on top of vbr compression/dedup?)?
Ubuntu vs RHEL, any pros/cons?
Proxy/Repo server will be connected to a SAN via iSCSI and vmware vCenter for a SAN mode.

Hello,
yes, Linux proxy on a Linux repository (except Hardened Repository) is supported.
XFS: because of block cloning
Ubuntu: because it does not force you to upgrade every few months (except you have the right support option from Red Hat)
