Rebuilding Veeam server?
When our Veeam backup server was first commissioned three years ago it was set up with RAID5 due to capacity requirements. However, recent changes have drastically reduced our required capacity and I'd like to rebuild the server using RAID10. Can I create a Veeam config backup, copy the backup files to external storage, rebuild server, reinstall Windows and Veeam, copy backup files back, and then restore the Veeam config from backup?

Yes, provided you preserve backup repository paths, this procedure should work.

Is there a better procedure I should be using?

No, your procedure is pretty straightforward.
