If my WAN is 1Gbps, should I still use the WAN setting, or is LAN more appropriate even though it's not a LAN.
I do not have the WAN accelerator license.

if in doubt, then keep the defaults. That's a general good practice for Veeam.
I would keep "Local target".
There is no "scientific rule" for that setting. The smaller the block size, the higher the RAM consumption on the proxies. But that might not be relevant depending on your hardware. So I would just keep the default setting.

Your VMFS Datastore is formated with 1 MB, so „Local“ Setting with 1MB block size is ideally for processing without additional overhead.
