Retain specific restore point?

I want to retain a specific restore point for an indefinite period of time. Is there a way to do that?

Greg, other than just copying the particular backup file to some external location for archiving, you can consider using GFS retention within backup copy jobs. What is the actual scenario you're implementing?

There's just one restore point that I want to keep indefinitely...i.e. I want it to be separate from the normal retention policy. Would I do a full backup and copy off the .vbk file? Is that .vbk file all I'd need to do a restore if I needed to in the future?

Correct, you just need a vbk file for restore. You can use VeeamZIP to perform a separate full of the required VM, to avoid affection of the regular job chain.
