simultaneous jobs

can I schedule multiple backup jobs simultaneously? how does Veeam handle jobs?
If multiple jobs are scheduled for the same time, does it start all jobs at once? or will it process one at a time and queue the others till the one is finished?

Sure, you can. Most customers choose to run multiple jobs in parallel. Jobs are started as they are scheduled. Thanks.

if we run multiple jobs simultaneously, what has a greater effect on performance? CPU, disk or network bandwidth?
will the stress be on the veeam server or the ESX host?

Everything you listed above will have effect obviously... stress will be mostly on Veeam server only.
