We have all of our SQL server backups set to automatic selection for Log Shipping Servers.
When the primary job is enabled and the first initial log shipping occurs we are able to see the assigned proxy server for log shipping.
The action window for the SQL Server Transaction Log Backup shows:
"Using guest interaction proxy {PROXYSERVERNAME} (Same subnet)"
After the first interval expires, the action window does not show the assigned proxy.
A couple questions:
When the current interval expires (15 minutes in our case), does a new proxy get assigned for every 15 minute session?
If the job has been running for some time how can we see which log shipping server is currently assigned?

Log shipping server is selected per backup job session. That's why you only see corresponding label once - immediately after source backup job cycle - the selected server stays then unchanged, till the next backup job cycle passes.

Seems you're somehow confusing log shipping server with guest interaction proxy in the job session. I'm not sure log shipping server name is displayed there, since there could be several shipping servers selected for different databases within a single job.
