Just starting to test out Veeam B/R, and until we bring in our new SAN I'm working with a fairly small storage location for our backups. It's basically big enough to store one full and a weeks worth of incrementals. I was wondering what the setup would be / if it's possible to have it overwrite or create new Full backups lets say every saturday and do incremental backups the rest of the days?

If you can store only 1 full backup at any point of time, then I would suggest using reversed incremental backup mode. Please take a look at our sticky sticky F.A.Q.

Or, alternatively, incremental backup mode with transform enabled. Whichever you prefer based on pros and cons from the FAQ!
