Are thery any known issues, that would come up, if i´ll take VBR server out of Windows domain?
All the Veeam services and local SQL server are running in LocalSystem account.

Hello,
if it's only one server and you do not change the hostname, then there should be no issues (talking about feedback I heard from partners and customers who did that).

Yes, i can confirm, that taking VBR out of domain, does not cause any issues with VBR backups.
Only exception seems to be Veeam Agents, that are not managed but backing up to VBR repo, i set up a local user account for that.
