Hi,
Im thinking of going with the Veeam Backup & Replication solution but before I do, can someone confirm if I still need to take snapshots of my VM's for restore points or does the incremental backups cover this? I noticed there was a safe removal of snapshots option so when I run a full backup and set the rollback points to 14. Do I no longer need to take snapshots of my VM's???

Any image-level backup solution requires making a snapshot of a VM before doing backup/replication of the VM. This also refers to the full and incremental runs. This snapshot is automatically taken and removed after you job finishes.
As for safe snapshot removal option, could you tell us what version of ESX hosts are you currently running? Safe Snapshot Removal is not needed for ESX 4.0 U1 hosts, because starting from ESX 3.5 U2 VMware already does this internally (creates Helper Snapshots). So it shouldn't be an issue for you if you're running vSphere.
