Is it possible to uninstall Patch2 (since multiple errors and failS)?

No, there is no way to uninstall the patch, except restoring your Veeam server from backup. I recommend that you open a support case though, because the Update 2 code was in the limited availability stage for almost 2 weeks and is installed by a few thousands of customers by now, so we can be sure that largely it has no critical issues - and those you are experiencing might be environment-specific.
