Quick question...can the Veeam Explorer for Exchange recover items from a BackupCopy job?

Yes.

Backup & Replication --> Backups --> Disk --> Expand Backup Copy Job --> Right Click Mail Server --> Restore Application Items --> Microsoft Exchange mailbox items...

You can do Instant VM recovery down to file level including application items, just as if you were restoring from a backup repository.
