Sorry if this is the wrong place to post this, but is there a portal where we can request features?
One of the features that would be beneficial for us is the ability to pause and resume backup copy jobs, without losing all the progress made. Is this something that's on the upcoming feature list?

We already provide ability to disable the Backup Copy job temporarily, sounds like this is what you are looking for. Also, note that Backup Copy job scheduling allows you to setup allowed transfer windows.

I must have missed it! So disabling the backup copy job, and then enabling it will make the job pick up where it left off? Or is there a different way to do this? Also, thanks for pointing out the copy job scheduling, definitely helpful!

Yes. Technically speaking, disabling the job will mark the existing backup file as incomplete, and enabling it will start the new copy interval - but the data already transferred and sitting in the "incomplete" restore point will not be transferred again.
