Hi,
When I did few test restores I noticed that for restore Veeam uses network and not the san network. Is it expected thing or is it possible to fix this somehow?

Hi,
All restores are performed through management interface of the ESXi server (in the same way vSphere Client uploads files to the datastore), to make restores faster you can use HotAdd proxy server located on the target ESXi host.

I believe you cannot use san mode for restoring because the datastores are mounted but offlined in windows. Also VMFS cannot be write mounted in windows without custom drivers.

SAN restores using the VDDK are actually quite slow, especially for thin VMDKs. VMware themselves acknowledges this in KB article 1035096 and generally recommends NBD as the fastest restore mode from a physical proxy, which is what Veeam uses in those cases. You can also deploy a virtual proxy to use exclusively during restores if you want a hotadd restore, and of course Veeam has Instant Restore as well.
