Dear All ,
do someone already use veeamzip to create an archive of an SQL or sharepoint user ?
do i have to shutdown, quiesce or simply do it ?

You simply do it with the default VeeamZIP settings.

VeeamZIP uses VMware Tools quiescence to perform application-level quiescing, so you get an application-consistent backup. But VeeamZIP does not perform advanced application-aware image processing (application-specific backup and restore procedures, including truncation of Microsoft Exchange and SQL Server transaction logs, restart after restore in correct application recovery mode, etc.). This can be done with the help of normal backup jobs only.
