How much will defragging a drive upset the CBT? Will it mean that a lot of extra data which the CBT records when defrag hits the disk sectors will be backed up?

Leon,

You're correct.The first incremental backup after defragmentation will produce huge incremental file because of many blocks changed. You will see the benefits of defragging only on the following job run. In fact, I would recommend to perform full backup immediately after defragmentation.

Although a defrag will cause many blocks to change (move), if you run an SDELETE, shouldn't we expect the incremental change to be very small, because all of the zeroed sectors should be deduplicated or compressed to almost nothing?

Sdelete will indeed eliminate the need to copy unused blocks (zeroed ones), however defragmentation itself still changes a lot of blocks so typically first increment will be larger than usual. Please review this related topic, could be helpful.
