We have just migrated storage from older ExaGrids to a new ExaGrid model. We have 10GB end to end however the backup copy jobs do not get much over 100MB/s. We have many TB worth of data to move and it has been going like this all week.
We have worked with ExaGrid support and have confirmed that we are optimized on their end.
iPerf tests reflect that throughput between the hosts is healthy and the B&R server is not showing any signs of resource constraints. Disk/CPU/Memory/Network are all healthy and reporting being underutilized.

Honestly sounds like you have a 1 Gbps NIC somewhere in the mix that traffic is flowing through.
