Is there a way to get backup reports from VeeamOne on a single DB instance inside a shared SQL Server?

I am not sure I understand the question clearly. Veeam ONE does not require multiple instances. What is a "shared SQL Server"? Something in the cloud? Could you please provide more details about that?

We are backing up several SQL Databases spread across a handful of servers. Some customers want a report of their DB's being backed up. Can VeeamOne provide a report on a single DB and not just a report of the whole SQL server?

The data depends on how you make a backup. For example, per the database information is available for Veeam ONE enterprise application plugins monitoring and reporting.
