is it possible to collect Cloud Gateway Summary Information (like [Weekly/Monthly Summary] Utilization) from Data Protection via the Rest API?

There is no such possibility, mostly because of historical data on charts and aggregation considerations.
Is there a demand? Could you please tell us about your use case?

we want to monitor our Cloudgateways so that we can prevent a bottleneck or at least see in advance that it maybe could occur in the near future.
Like checking Max User Connections once a day for example.
We found a bit more in the WMI Namespace like DataSent/ReceivedbyClient but no User Session information.

Hello Refruit,
We store hourly statistics in the database and the same should be in the CloudGatewayStatistic WMI class but without connection count. Look at JobSessionEvent WMI class type 9, this is the statistic we got after the job finished.
