Why does Data Protection View just show repositories and proxies, but no jobs or VM's?
I have Veeam One 8.

Hello. It does.
Click on the Veeam Backup and Replication server and "Jobs" tab. Use filters to review only successful/failed/running etc. jobs.

This is an old Veeam One install, that is upgraded over some versions.
But when I made an new install of Veeam One the data started to come.
