I have a bunch of folders in my vCenter under the root of the Datacenter. These folders change on a regular basis.
Is there a way of creating a grouping expression so that I can run a report to categorize my VMs by the folder they are in?

Yes, you can create dynamic groups in the Veeam One Business View, using vSphere folders.
And then you can choose those groups in the scope of Veeam One Reporter. Let me know if you need any assistance with it.

Please use the instructions from this link > Creating Dynamic Groups. This will create dynamic groups based on VM folders.
