I want to backup a domain controller without giving domain admin rights; any knows which rights I have to give.

If you are looking for VSS consistency alone, then you should enable VMware Tools quiescence in the advanced job settings, and make sure the DC VM has VSS integration option installed as a part of their VMware Tools install. On the other hand, if you want to backup your DC in a consistent way, then you need to provide domain admin account and enable application-aware image processing. Thanks!

How does these two methods differ from each other what comes to restoring?
Can I for example use Explorer for AD to restore users/Objects if I take backup without using AAIP?

No, you need a successful application-aware image-level backup of the DC to be able to use Veeam Explorer for AD. Also, without AAIP, application-specific settings will not be applied to prepare the VM for VSS-aware restore.
