Backup MS Exchange 2010 and MS SQL

We are considering purchasing the Essential bundle to use with our Vmware Essentials plus bundle. Can you pls tell if your Essentials bundle includes the ability to recover single files as well as individual emails, mailboxes and MS SQL tables etc.

if we have 2 hosts, with 2 sockets each. How many essentials ent licences do i need.

4 socket licence all together? Sorry i am new to Veeam and trying to look at whether we should stay with Symantec or move to Veeam. Is there anything else we would have to purachase apart from the Veeam essetials pack to backup all our virtual enviroment, including applications, file level recovery, Exchange store and mailbox as well as SQL tables and queries.
