I've found in the forums that it is supported to install the backup proxy on Windows Server Core but I have not found (with limited searching) the directions to do this. Anyone know where the directions are or how to install software in server core?

It does not matter if the server you are installing backup proxy on is core, or full blown. This makes no difference whatsoever. Just right-click the Backup Proxies node in the management tree of Veeam UI, select Add New, and follow the wizard. Thanks!
Microsoft Windows Server Core You cannot install Veeam Backup & Replication and Veeam Backup Enterprise Manager on a machine running Microsoft Windows Server Core. However, you can assign roles of a backup proxy, backup repository, WAN accelerator, Veeam Cloud Connect infrastructure components and tape infrastructure components to machines running Microsoft Windows Server Core.
