Check the current time on your ESXi host. Most likely it is not synchronized, which makes your VM change its time during snapshot operation. Thanks!

So you did have wrong time configured on the ESXi host or you just reconfigured time settings on the VM?

Do you have the latest version of VMware Tools installed in this VM? Can you confirm that the time changes every time you create a snapshot (can do that manually via vSphere Client)?

What about the second question? If it is reproduce-able when you're taking a Vm snapshot, then I would suggest looking into VMware VM logs for more details on the issue.

Also, check the time zone of both the hypervisor and the VM, a 1-hour skew on updates is suspicious of time zone problems...

Yes, we see that and I have asked you to make a test case to confirm that it is snapshot-creation/commit issue. Did you have a chance to reproduce that?

If you search these forums, you will see that there are existing topics with a similar issue which is reproduceable via snapshot creation/commit operations. Looking into VMware VM logs of this machine should also give you some hints on this.
