Is there a way to create a 2nd copy of the backup configuration backup file in case our main repository goes down? I've been copying the configuration backup to a "Onedrive" site as a 2nd copy in case the primary repository fails.
Veeam is scheduled to Backup the "configuration backup" each day. Suggestions?

You can use the file copy jobs for that.

In addition, I would like to "automate" this instead of doing it manually each day.

File copy job allows that.
