Instant VM recovery of remote NetApp snap shot.
When doing an Instant VM recovery from remote NetApp snap shot, use the VM then if I do not migrate but shut down the VM is the snapshot back to it original contents?

The original storage snapshot will always contains its original contents - in case of Instant VM Recovery we're running VM from a clone of the selected snapshot specifically to keep the original snapshot intact (in case you need to perform other restores from the same state).
As far as the clone goes, current VM state will persist there until you unpublish the VM from Veeam UI.

when I unpublish the VM from Veeam UI the snapshot is back to where I started?

The snapshot is never changed. We just leverage the snapshot as a temp datastore to get the VM back up and running before a migration off.
