I have been running a number of jobs successfully in the last week and last night only received 1 of 6 mails with details. I checked with the team that looks after mail and they cannot see any stuck mails. Is there a specific log I can check within Veeam that can show that a notification was generated and sent.

Under C:\ProgramData\Veeam\Backup\[JobName] you will find a log Job.[JobName].Backup.log where at the end of a session you can easily see if email was successfully sent:
[15.07.2021 08:36:19] <01> Info Sending e-mail notification, server 'your.smtp.domain.local', port '25', timeout '100000', use ssl 'False', to 'your.email@domain.com'
