I have just taken over management of a small VMWare VSphere installation. We have several VMs that are not used and I want to clean up by deleting anything that is not needed. I have turned the ones that I think are unused off and have been using VEEAM to back them up using the "VEEAM zip" function.
So, the question is... If I discover that one of the VMs that I have VEEAM zipped and then deleted is actually needed, will the "VEEAM Restore" function bring the VM back to the way it was?
I think the answer is "yes", but I want to be sure I understand what I'm doing before I delete the VMs.

Yes, it will. In order to restore the VM, you will need to import existing backups to the console and do the restore.
