Are there any drawbacks in just using the backup of a physical machine with the Veeam windows agent and restoring into ESX rather than using the Veeam P2V Converter?

If you speak about the VMware P2V converter, I would go with Veeam, as we create the VM in a way that it is optimized for Backup later. VMware P2V depending on settings will allow you to transfer a phyiscal server into a VM where for example the block allignment is off and performance of this VM (including backup) is not ideal.

Yeah, I would not recommend VMware P2V Converter as we saw some issues associated with it before. But "Veeam P2V Converter" which is instant recovery of any backup to VMware is certainly a good option.
