Problemas with Instant VM Recovery
Which may be the reason that when doing a VM Recovery it can only do it on a particular host of a cluster in vCenter, for all the other hosts it always fails.

No access to the vPowerNFS Server (your configured mount server for the backup repository) could be one possible cause. I can think of another 2-3 reasons, but without having access to your environment or seeing the actual error message, it‘s not possible to troubleshoot.
So please open a support case with veeam, it‘s required for all technical issues before creating a topic here in the R&D forum.
You can try by yourself with analyzing the veeam and vmware logs. The software should show you where the issue starts.

Seeing the problem. In the vCenter task viewer it reports the following failure when trying to mount the NFS datastore to publish the VM via Instant VM Recovery

That seems to be an issue that it already worked once and now the vSphere Host still has it somehow in the config but not showing up again.
With that a re-mount fails of course.
You can try to empty the hosts one by one with vMotion and reboot them and see if this fixes the issue.
I would recommend to also open a ticket at VMware as this is message is coming from your vSphere APIs.
Lastly a case at Veeam is alwasy good as well to collect the logs and let our team have a log.
Please share the Veeam Case ID here.

The host has already been placed in maintenance mode and has been rebooted, but the failure persists. At the same time, it is evident that the performance of the VMs on that host is not optimal. A case was opened with Vmware.
