Question about backup copy jobs
Say you have an environment with two repositories for backups, lets call them A and B, on the same host at one location, there are no remote locations in this scenario. Lets say that backups of local VM's are being done to A and B and then backup copy jobs are run and the jobs are copied to C which is also local to A and B. If I lost either A or B, can I still use the backup copy jobs on C? Assuming the host on which Veeam is installed, is a physical host local to A+B+C and is still available? For the sake of this scenario lets assume that A+B are local drives to the host on which Veeam is installed, and one of them dies?

Do you mean the ability to restore from the repository C in case of losing A/B? Yes, you can even import backups to a fresh Veeam B&R installation in case you completely lose original backup server.

So if we extend this scenario and introduce a remote location, how would I ship the backup copy jobs offsite across an MPLS network connected at 100MB? Do I just need a repository at the remote site or do I also need a server running Veeam?

Just a repository at the remote site is needed. I do this very same thing.
