Restore points policy not working for me

Is my understanding of restore points correct on my part or how does it work.

I have set my backup job to have 7 restore points on my retention policy.

But when I look at my backups disks I see 8 Restore points - should it not delete the oldest one and keep only seven restore points ?

There is something that i am not getting obviously

Depends on the backup method you're using (forward incremental, forever forward, reverse).

i am using forward incremental. Should it not make a new full on the 8th day and delete my last full ?

No, it simply cannot. Please review how retention works for forward incremental mode.
