Hey, Veeam can only use Direct SAN access as a transport mode for restore if all the disks for the VM are thick. If one of them is thin it will use another mode for all the disks
Anyone know if changing the disk type at the restore wizard step will allow you to use Direct SAN access for the VM?

Yes, changing of disk type in the restore wizard enables data write in the Direct SAN mode. By the way, the thick eager-zeroed disks give better performance on restore.

Thin disks will be restored always as thick when you use DirectSAN transport mode at restore as it is a limitation of VMware with this protocoll.
