Hi,
i am thinking to have 1 snapshot every hour. Is it possible with Veeam 7 without storage snapshot? Can Veeam consolidate the snapshots to 1 every day?

Nick, you can schedule a backup job to perform a backup every hour and make synthetic full at the end of the day (if that is what you are talking about - "consolidating" hourly restore points into the new full day restore point). Ability to do that depends on the VM size and amount of changes occurred between job cycles and hardware performance as well.
P.S. Just to make sure we're on the same page: backup is not a snapshot. VM snapshot is required to perform a backup, but it is removed after the backup is done and restore points are stored in Veeam format on target repository disk.
