Hi
We are planning to start using Linux immutable setups for our proxies and I just wonder if it is supported to build SOBR with Linux immutable proxies and if there's anything we need to take into consideration before starting?

Totally supported and works fine. If you talking about immutable Backup Repositories. Not proxies
An immutable Backup Repositories cannot be used as a veeam proxy server.
For the consideration part, see this guide.
There are some notes about using it in a SOBR.

Proxy reads from VMware (and writes to VMware at restore), compresses the data and sends it to the Repository Server (Hardened Repository in your case). You can create a SOBR out of Hardened Repositories.
While Proxy and Repository can both run on the same Linux or Windows system (including SOBR), the Hardened Repository is implemented in a way that for security reasons you can not run a Proxy on the Hardened Repository Server as the Proxy need more rights than the Hardened Repository concept would allow and it would punt a big security hole in it.
