Is it possible to get Veeam6 to write its VBK and VIB files to a UNC path that is hosted on a large RDM (for the purpose of this RDM also being accessed by my tape library in order to then write those veeam backup files to tape).

Yes, just add this backup target as CIFS repository (User Guide - page 82) and configure your jobs to use this repository.
