HI,
I jus started with veeam and i got a problem for the granulary restore.
I want restore an email from the backup of my exchange 2003 who's running on MS Server 2003.
I didn't find the documentation for hot to do this.
Can someone help me please?

Fodil, please review the U-AIR user guide describing granular restore process for versions of Exchange prior to 2010.
Also, just FYI, there is a powerful Veeam Explorer for Exchange utility that allows to perform granular Exchange 2010/2013 item-level recovery directly from backup files without involving virtual labs.

Besides U-AIR, you can also put into use Instant VM Recovery in conjunction with Outlook client in order to restore granular Exchange 2003 data. The corresponding procedure should be as following:
Start your Exchange from the required backup file, then, connect to it through Outlook client, and copy necessary items into PST file. After that, this file should be imported into production Exchange, again via Outlook.
