I have files in the other drives/folders, but one of the drives displays as empty no matter which restore point I open.. Really need to do a file level restore from this vm's backup.
Looks like this may be related to bitlocker. How do I restore a file from a bitlockered volume that was backed up?

You need to start a instant vm recovery session and copy the files manually back to the production environment. With the help of vcenter console/temporary vmdk.
Veeam cannot read bitlocker encrypted content of course. The vm need to boot up to read the files and folders.
