We are experiencing VM stun when we use VMware VADP snapshots. Will array snapshots instead of VADP snapshots solve the issue? Is array snapshots designed for addressing the issue?

Yes, that is the case to use Backup From SAN Snapshots functionality!
Note, that VADP snapshot is still required(for application consistency) and will be taken prior SAN Snapshot. However, right after SAN Snapshot creation, VADP snapshot commit command will follow, mitigating VM stun experienced when VADP snapshot kept for the entire backup job duration and grows too big.
