Hello,
I have a Hyper-v 2012 R2 server with a virtual machine (Name: VM-A).
Every Friday I do a backup-job of the VM-A. Backup with CBT enabled.
Every Tuesday I do a Replication-job of the VM-A. Also with CBT enabled (I obtain the VM data from the production storage and not from the backup files).
Is it correct that after each backup/replication the cbt (changed block tracking) is reset?
if so, then my backup-job contains only the newer data from wednesday to friday (and not from Friday to Friday) and my replication-job contains only the newer data from saturday to tuesday.
Is that correct?

It's not correct. Otherwise it simply would not work.
Incremental backup job contains all changes happened from Friday (previous job run). Same for replication.
By the way, have you considered leveraging Remote Replica from Backup option.
