Just started using veeam to measure disk latency.
I know it should be ideally under 10ms for a vmdk but what
would be the acceptable treshold for an entire datastore?

I guess it depends on the type of the datastore and the load that VMs produce. However, based on our experience I can say that this article should be a good place to start with, as the thresholds inside seem to be reasonable enough.
