I opened a ticket on this (Number 00645441) but Veeam support said it's most likely a problem on the exchange end. Although I wanted to see if anyone had an idea on what to configure on Exchange 2013.
I've double-checked the credentials when I configure E-mail notifications but I'm still getting the following error when I try and test an e-mail:
The SMTP Server requires a secure connection or the client was not authenticated. The server response was 5.7.1. Client was not authenticated.
I've actualy got two environments set up, the first one worked on Exchange 2010 without a hitch, but I'm getting this error on our Exchange 2013 environment. My first troubleshooting step was to check the box for "Anonymous" on the default Hub Transport, but that hasn't fixed the issue.

Found the problem--the Veeam server had to be added as a "Relay transport" in Exchange 2013 under "Receive Connectors."
