We just migrated a Physical server over to a VM and the server is running a CACHE database, this is an in memory database which we used to just stop the service ... then backup... then we start it back up with a post script..... i see the place to enter a script to run after the backup.... but is there a way to shut down a service before the backup starts?

Yes, you can use VMware prefreeze/postthaw scripts for that... search for this on forum or Google for more information.
