We have a potential customer running a physical SBS 2008. He will migrate during the year, BUT.. he want to have a good backup solution now.
Will Veeam Endpoint Support to be installed on this box? And will it eventually truncate exchange 2007 log files? (I know Veeam actually just support Exchange 2010 in the B&R product..)

Correct, you need to be running at least Microsoft Windows Server 2008 R2 SP1 (SBS 2011) if you want to use Veeam Endpoint Backup.
