Hello,
Is possible to do an retroactive collection of the VMware vCenter after install the One ? For example, after a fresh install of the Veeam One we need to collect the informations logged in the last 30 days in vCenter, instead of waiting the next 30 days.

Historical data collection from vSphere once depends on the product version and deployment type of Veeam ONE. By default (starting from v8 u2), it is disabled because of these reasons: Veeam One v9 does't collect historical data from vcenter. If you want to enable this feature back, please follow the instructions from this KB article > https://www.veeam.com/kb1609

MedPerfQueryPeriod is for 5min aggregated historical performance taken from vSphere, LowPerfQueryPeriod is for 20min aggregations. Values are measured in minutes.
I would suggest to set MedPerfQueryPeriod = 20160 equals 14 days and MedPerfQueryPeriod = 88320 which is 2 months.
