From Dynamic Disks to a Basic Disk?

Apologies if this is a repeat, I failed to find a similar question posted.
I have several dynamic disks in several vmdk files on my inherited VMware 6.0 environment. Is it possible to restore the data and shares in here to a single vmdk in a basic disk form on Windows 2012R2?
Would I back it up as a specific job, remove disks / take offline , create required disk and restore data to this with VEEAM 9.0?
The dynamic disk is 1TB and MBR. It houses SCCM packages and data, so want to maintain shares etc, but wonder if this is do-able and should I keep it as MBR or would GPT be OK as we have some work to do on apps packages which will increase the size here.

Hi Richard, why not just add the required disk to VM and copy data between the existing disks and the new one?

Easier said than done foggy. Permissions as an admin are all over the shop and users have created file name lengths beyond Microsoft's liking. Sort that once I have a disk structure I want - maybe :?

You can try the approach you've mentioned in the original post, should work.
