We have a log of jobs targeting folders in vSphere. We would like to be notified when something is added to the backup job via VeeamOne as our support staff monitor that for issues.
We recently had someone accidentally move a large folder into another folder and caused a repository to fill up.

This might not be exactly what you're looking for, but you can try to detect these situations today with a "Max allowed job duration" alarm. This alarm not only will detect new objects added to the job, but also you will be able to track if someone copied lots of data to the VM disks which might lead to exactly the same situations. The more data is to process, the longer job runs.
Would that be a feasible workaround right now?
