Quick Migration - Specific VMDK

I have a VM that had 3 disks spread across 3 datastores. I need to move one of those disks to a new datastore but do not have licencing for storage vmotion.

Can i use Quick Migration to move a single disk and leave everything else where it is ?

I've run through the quick migration wizard and found i can "Pick datastore for selected virtual disks." Should i match the disks i don't want to move to the datastores they are already on ? or is there a better way to do this.

You can, but in this case a new VM will be created. Disks that do not need to be moved between datastores might be just re-connected to it, but better check this.
