two backup-server accessing the same vmfs
Is it possible that two Veeam Backup Server access the same vmfs via LAN-Free Backup thru vStore API on a FC Storage (backing up different vmdks, of course) without interference?

It is possible, but you should consider if it will affect the performance of the VMFS.
Having two B&R servers pulling data and X ESX(i) servers using it for VMs.
Or maybe it's just us that has a crappy SAN

This is called "shared" storage for a reason so yes, it comes down to what specific SAN is capable of. Although, if backup is done during off hours (as it is usually the case), then even high load on SAN should not be affecting anyone.

Our business is busy 24x7, so there's a never a good time for backups

Yes, 24x7 is a totally different story. Have to be really careful there with backups.
